Ok, this is a recipie I got off the internet and tried in the smoker. It was beneath 2 slabs of bacon (one with Maple Syrup and one with Cracked Black Pepper) and beneath a rack of KC Masterpiece chicken.
6 strips of thick cut bacon
2 medium onions, coarsely chopped
2 Chili Rellianos, coarsley chopped
1 jalapeño, or more or less to your taste, coarsley chopped
1 can (15 ounces) red kidney beans, drained and rinsed
1 can (15 ounces) white kidney beans, drained and rinsed
1 can (15 ounces) black beans, drained and rinsed
1/2 cup raisins
3/4 cup Kansas City style BBQ sauce
4 tablespoons molasses, any grade
1/4 cup Tennessee whiskey
2 teaspoons dry mustard1 teaspoon Chili Powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 bay leaf (try not to leave this out)
Steps:
1) Fry up the Bacon. Don't fry it Crispy. Put it AND the grease into the bowl.
2.) Ad EVERYTHNG else.
3) Stick it beneath the meat in the smoker so they collect the drippings. I ran the smoker at 200 degrees with cherry and hickory wood... for about 4 hours.
Serve and eat! MMMmmmm

YUM! Those were GREAT beans!
We made some rather small, though significant changes in the recipe above when Booj and wuff smoked these beans -- the substitution of Jack Daniels Honey BBQ sauce instead of the 'pure' KC-Style BBQ. This mixed very nicely with the whiskey, to leave a distinctive whiskey flavor to the beans.
Booj also added a measure of the pork "mistake" rub he'd used on prior pork loin. This has a very robust, peppery flavor, and added a nice complexity to the result.
Finally, Booj cut the onions into much larger 'chunks' than the diced normally found in other beans.
The recipe results in beans more like "ranch style" than "Boston Baked", but the BBQ sauce added a mild sweetness not typically found in the more savory "ranch" versions. And the whiskey and Jack Daniels BBQ infused it with a distinctive aroma and flavor. The big chunks of onion didn't meld and "melt" into the beans as smaller dice would have, adding a very nice crisp/crunchy texture and providing yet another distinct taste element to add diversity in the flavors. The various types of beans, spices, mustard, and hot peppers are more common to 'ranch' style, but with greater complexity because of all the beans. And the raisins complement the sweet BBQ flavor nicely. Make sure not to forget the bay leaf! (grin)
These are definitley great beans to enjoy with a robust meat dish; beef brisket would be perfect. They're also wonderful with a nice buttery hunk of crusty San Francisco bread. Dig into a bite of these and a bite of the bread, and sop up the juices with it - - sometimes a simple 'peasant fare' is the best meal around.

Whoops, I forgot I used the Sweet Jack Daniels BBQ Sauce instead. and yes, I added some additional spices. I just wish I knew what they were.. *happygiggle* Welll... I made it so long ago.. and sort of messed up on my spices... like using tablespoons instead of teaspoons of some of them. it was very YUMMY though, and did compliment the dish nicely.

Mmmmmm! Sounds wonderful! Of course, I like sweet BBQ beans to begin with - but it sounds like you made them even more drool-worthy with the drippings.

Indeed! These weren't near as sweet as a Boston baked bean type, but definitely more sweet than the "standard" version of Ranch style. Though the savory spices, onions, and mix of beans certainly gave it pretty strong "ranch-like" qualities.
Just reserve some of those bacon drippings you're getting when you fry up wuffy's home cured bacon, and mix those with some fried store-bought bacon bits to put into the beans for extra meat, and you'll have a great batch of flavor there!

That sounds *good*! Add a little maple syrup to the beans and I think it'll be unstoppably yummy.

Ok! So this is a really good dinner beans that I made using this recipe and my crock pot. I have a 5qt crock put and this COMPLETELY filled it, so you might be better with a 6qt crock pot.
1 smoked Ham Hock
2 Basil Chicken Sausages
6 strips of thick cut Smoked and Peppered bacon

2 Chili Rellianos, coarsley chopped
2 jalapeño, or more or less to your taste, coarsley chopped
2 can (15 ounces) red kidney beans, drained and rinsed
2 can (15 ounces) white kidney beans, drained and rinsed
2 can (15 ounces) black beans, drained and rinsed
1 cup Golden raisins
1 1/2 cup Sweet & Spicy BBQ Sauce
8 tablespoons molasses, Brer Rabbit Full Flavor
1/2 cup Tennessee whiskey
2 teaspoon Chili Powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup fresh chopped Cilantro
Steps:
1) Fry up the Bacon and Sausage. Don't fry it Crispy. Put it AND the grease into the bowl.
2.) Ad EVERYTHNG else.
3) Let run on low for 11 hours. I made this the night before and brought it into work for a meal, and boy was it good. It had just enough spicy heat to warm you up as you ate without hitting you in the face. If you like it hotter then I would add 2 more Jalapenios and 2 more Pasillo Peppers.
* And a note to myself, add 2 more jalapenios just to bump up the heat a little bit

Ok, so here are the Sweet Maple BBQ Beans I made for the 4th of July this week... for those who don't like spicy hot.
1/2 lb Smoked Ham (Mine was just Safeway Brand.)
1 tsp Bacon Fat
2 large RED onions, coarsely chopped
2 can (15 ounces) red kidney beans, drained and rinsed
2 can (15 ounces) white kidney beans, drained and rinsed
1 can (15 ounces) black beans, drained and rinsed
1/2 cup Sweet & Spicy BBQ Sauce
1/2 cup Maple BBQ Sauce
1/4 cup Maple Syrup
8 tablespoons molasses, Brer Rabbit Full Flavor
1/2 cup Tennessee whiskey
2 teaspoon Chili Powder
1/2 teaspoon salt
Steps:
1) Put everything in Crock Pot.
2.) Cook on high for 5 hours or low for 9 hours.
