    Ok, this is a recipie I got off the internet and tried in the smoker.  It was beneath 2 slabs of bacon (one with Maple Syrup and one with Cracked Black Pepper) and beneath a rack of KC Masterpiece chicken.

6 strips of thick cut bacon
2 medium onions, coarsely chopped
2 Chili Rellianos, coarsley chopped
1 jalapeño, or more or less to your taste, coarsley chopped
1 can (15 ounces) red kidney beans, drained and rinsed
1 can (15 ounces) white kidney beans, drained and rinsed
1 can (15 ounces) black beans, drained and rinsed
1/2 cup raisins
3/4 cup Kansas City style BBQ sauce
4 tablespoons molasses, any grade
1/4 cup Tennessee whiskey
2 teaspoons dry mustard1 teaspoon Chili Powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 bay leaf (try not to leave this out)

Steps:

1) Fry up the Bacon. Don't fry it Crispy. Put it AND the grease into the bowl.

2.) Ad EVERYTHNG else.

3) Stick it beneath the meat in the smoker so they collect the drippings. I ran the smoker at 200 degrees with cherry and hickory wood... for about 4 hours.

Serve and eat! MMMmmmm
