Crock Pot Hamburger Potato Casserole

    I found this in a magazine..  or at least some of it..  and decided to turn it into a hamburger casserole!   I can't resist!   So here it is after modifying...

 

Stuff:
2 lb Ground Beef
2 can condensed cream of mushroom soup.
2 medium sweet red pepper chopped
1 cup frozen peas
2 cup chopped sweet onion
1 celery rib thinly sliced
4 cloves garlic, minced.
2 tsp dried thyme
1 tsp coarsley ground pepper
2 tsp italian dressing mix
2 1/4 lb medium red potatoes, cut into 1/4 inch slices
2 tsp Salt
2 cup shredded Chedder cheese.



Instructions:

1.  In a large skillet fry Ground Beef together with onions.
2.  In a large bowl, combine skillet contents, Soup, Italian Seasoning, Red Pepper, Peas, Celery, Garlic, Thyme and Pepper.
3.  Put half of mixture into bottom of greased 5qt slow cooker, then a layer of potatoes.   Repeat until everything is gone.
4.  Cook on Low for 8 hours or until potatoes are tender.

This sounds like it would be scrumptious! Very similar to a "one skillet" version of hamburger stuff wuff makes when he wants a "comfort food" fix!

Here's an extract of a recipe set I just posted for "do it yourself" sauce mixes that 'just happens' to go with Booj's recipe above.

Do It Yourself Italian Dressing mix....

Homemade Italian Dressing Seasoning Mix

1 1/2 tsp garlic powder
1 tbsp onion powder
2 tbsp ground oregano
1 tbsp dried parsley
1 tbsp granulated sugar
2 tbsp salt (adjust to your own personal preference)
1 tsp black pepper
1 tsp ground basil
1/4 tsp ground thyme
1/2 tsp dried celery flakes

Mix all ingredients together and store in an airtight container.
To prepare the dressing: Mix two tablespoons of the mix with 1/4 cup vinegar, 2
tablespoons of water, and 1/2 to 2/3 cup olive oil or canola oil.

Ok.. the Hamburger Casserole was ok, but really needed more flavor. I think I need to double or triple the amount of black pepper and add more garlic.. possibly some other italian herbs as well to bump up the flavor levels.
