Ok.. feeling industrius I decided to make myself a bag lunch for tomorrow. A nice one, since we have a microwave at work. Here is my bag lunch:
My Bag Lunch:
My Bag Lunch for tomorrow.. I'm making it up tonight.
Rosemary Smoked Beef, Honey Glazed Baby Carrots, Coleslaw
Recipe:
Rosemary Smoked Beef (Already made, see entry)
Honey Glazed Baby Carrots -
4oz baby carrots
1/4 tablespoon butter
1/2 tablespoon brown sugar
1/2 tablespoon honey
1/4 teaspoon cornstarch
1/16 teaspoon salt
Cover and heat in microwave. This is a 1/4 recipe from the normal fixing. It says to heat for 10-12 minutes, but I'm going to try it a shorter time first.
Coleslaw Dressing-
5/8 cup Mayonnaise
1/6 cup sugar
1/8 cup cider vinegar
1/8 teaspoon celery seed
1/4 teaspoon Creaole Seasoning
1/8 teaspoon black pepper
Salt to taste.
Put it all in a jar, shake to mix, put in fridge to store. I also added a bit of Horseradish mayo (since I had no horseradish to toss in)

Ok! So a bit more on my lunch.
1. The coleslaw worked out wonderfully, but I think I'll add more black pepper and horseradish to the mix.
2. The honeyed Carrots were yummy, but needed something else. I think I'll add some ginger and see how that comes out tomorrow. Also, I think I should use a bit less butter.
3. The meat was yummy, but then again it was just reheated in the microwave!
Cooking times! I put the meat AND the carrots into the microwave for 3 minutes and that was enough to cook the 4oz of carrots AND heat up the meat! Nummy!

So todays sack lunch was Chicken Jambalaya (and so was ShadowCat-X's,) and left over russian potato salad (from a friend at work.)
1. Put 1 box of jambalaya rice mix (and all additional ingredients listed on the box) into an 11 cup microwave safe dish.
2. Add thicken thighs (as many as you want.)
3. Cook covered for 30 minutes on full power.
4. Let sit for 10 minutes to cool.
5. Put into individual servings.
So this made enough for one meal for each of us... and a yummy meal it was.

One of wuff's favorite "brown bag" luncheons (which doesn't actually involve a bag at all) is "Beanie-Weenies". It's definitely a very "low class" meal, but one that wuff definitely enjoys from time to time, and super-duper simple.
In a microwave-proof plastic (Tupperware) container, combine:
1/2 can of your fav pork 'n beans
About 1/2 Tbsp of brown sugar
About 1/2 Tbsp of minced dried onions
1 tsp of granulated garlic
Dash of liquid smoke (hickory or mesquite)
A couple good shakes of black pepper
Mix all together well to distribute spices and sugar, then add:
2 hot dogs cut into 1/2 inch segments
Stir and cover, refrigerate until lunchtime.
Heat until thoroughly warmed - about a minute in most microwaves. Might need a stir and a bit more heat, depending on the wattage of your oven.

So, I wasn't going to do this -- on account of exposing myself for the anti-foodie that I am -- but I hate to feel like I'm not contributing. So, my favorite bag lunch:
Ingredients:
2 slices whole wheat bread
1 heaping tablespoon (approximately) of natural crunchy peanut butter
1 teaspoon (approximately) of honey (any variety)
4 oz. bag of peeled, baby carrots
1 Red Delicious apple
1 12 oz. bottle of water
1 treat (a small chocolate bar, a few cookies, etc.)
Freeze about three ounces of water in the water bottle during the previous night. Fill the bottle with the remaining water before leaving the house. This will keep the liquid cool for drinking -- as well as help keep the apple and carrots chilled and fresh.
Spread the peanut butter over one slice of bread. Distribute the honey evenly over the peanut butter. Cover with the other slice of bread. ^_^
