So todays sack lunch was Chicken Jambalaya (and so was ShadowCat-X's,) and left over russian potato salad (from a friend at work.) 1. Put 1 box of jambalaya rice mix (and all additional ingredients listed on the box) into an 11 cup microwave safe dish. 2. Add thicken thighs (as many as you want.) 3. Cook covered for 30 minutes on full power. 4. Let sit for 10 minutes to cool. 5. Put into individual servings. So this made enough for one meal for each of us... and a yummy meal it was.
