Ok.. so I overspent a little bit on the carpet.. ok, so I overspent a LOT on the carpet! *giggle* But the carpet looks beautiful, so I'm happy. Now, however, I'm feeling guilty and trying to eat for less at least until my next payday. Thus I present to you, in the current series of low budget dinners, Boojum's Budget Dinner!
This dinner comprises of hamburger hash and honey/ginger carrots.
Hamburger Hash
1 Bag Safeway brand potatoes O'Brien
1lb ground beef
1 medium sweet red onion
1tsp Black Pepper (I think)
1tsp salt (I think.)
Honey Ginger Carrots
1/2lb sliced carrots (1/4" thick
1TB honey.
1TB Ginger Paste
2 pinches of salt
1tsp chopped parsley
1/2tsp cumin
2TB butter
Hamburger Hash Steps.
1. In a LARGE pot, brown the hamburger and the chopped red onion, and 1/2 of the salt together.
2. Add everything else to large pot.
3. Stir frequently. About halfway through I put a lid on it to help it cook faster.. but you have to stir it every few minutes to keep it from burning on the bottom.
Honey/Ginger Carrots
1. In largish pan melt butter over medium heat.
2. Add carrot slices, stir to coat in the butter.
3. Add Ginger and stir to coat with both butter and ginger. Stir almost constantly to keep sliced carrots against the pan and simmering.
4. Butter will start to vanish. Add honey, parsley, salt, and cumin at this point.
5. Keep stirring over heat until of desired tenderness.
Now here is the magical thing about these two dishes. Cooking time on them is the SAME if you start cooking the carrots at the same time you begin cooking the potatoes! How is that for a magic trick!
The whole thing cost me about $9 and is good for about 3 meals.. so $3 per meal (Note, I bought a full pound of carrots at this price and only cooked half of them right now. That provided enough carrots for 2 meals)

The brown bunny giggles happily. "That was plated straight from the pans, set on the footstool, and then had it's picture taken. So that is, indeed, steam you see coming off the food." Boojum scampers in a happy bunny circle, fluffy tail wiggling. "And it was YUMMY too!"
