    Ok, this is a basic recipe that can be modified.  I made this using smoked ham from safeway (because it was inexpensive after christmas ham) and a brick of cheddar cheese that I grated.

Ingredients:

8 ounces dried egg noodles

1 1/2 cups chopped cooked smoked ham

1 cup shredded cheddar Cheese

1 can cream of chicken soup

1/2 cup low fat milk

butter to coat casserole dish

Directions:

1.  Cook the egg noodles

2.  Put half the cooked noodles into a buttered 2 quart casserole dish

3.  Puth half of ham and cheese over noodles

4.  Pour 1/2 the soup and 1/2 the milk over noodles

5.  Put additional noodles in casserole dish.

6.  Put all the rest of the soup, milk, ham, and cheese in casserole dish.

7.  Cover casserole dish with foil.

8.  Cook in 375 oven for 30 minutes.

Looks like some delightfully yummy comfort food! Suspect this would also be very good as a breakfast side dish, substituting shredded hash brown potatoes for the noodles.

Well, since this was a sort of dish thrown together for ShadowCat-X and she prefers noodles to potatoes, I'll keep that idea on the back burner for when I'm making something just for me. :) And it is definitely comfort food at it's best! Cheap and easy to make. You'll notice that I didn't add any salt. The ham adds enough salt so that neither ShadowCat-X or I felt the need to add more.
