    Naturally this recipe calls for only organically grown, pesticide free, sun ripenned peaches...   because we are to lazy to grow peaches any other way.  ;)    Our peaches are in and are incredibly sweet.   Shadowcat-X (who's tree this is) decided she wanted to make some Peach Cobbler in the crock pot, so here is what we did.

1.5 c. all-purpose baking mix, such as Bisquik
 2/3 c. sugar
 1 c. packed brown sugar
 1 can evaporated milk
 4 tb. margarine or butter, melted
 4 eggs
 3 cups sliced peaches
 4 (ish) tsp. vanilla
 1.5 (ish) tsp. cinnamon

1. Lightly grease crock pot or spray with non-stick cooking spray.
 
2. In a large bowl, combine sugar and baking mix.
 
3. Add eggs and vanilla. Stir.
 
4. Pour in margarine and milk and stir.
 
5. Mix in peaches and cinnamon, until well mixed.
 
6. Pour into crock pot. Cover. Cook on Low for 6-8 hours or on high for 3-4 hours.

this actually turned out to be more of a bread pudding than a cobbler.  That's not to say it isn't delicious, but it's just not what I was hoping for.  I'll try again using a different recipe.
