Ok, here is a bit of an experiment to see what I could come up with. I found a recipe I didn't like, took what I wanted from it and added some new stuff. Ingredients: 2lb stewmeat, cubed 6-8 carrots, peeled and cut into chunks 6-8 red potatoes, scrubbed and cut into chunks 1 cup pearl onion 1 tsp minced garlic 1/2 tsp dried basil 1/2 tsp dried mexican oregano 1 tsp salt 1/2 tsp black pepper 1 tsp Better than bullion Beef Soup stock 3 cups water. Steps: 1. Put everything into my 5qt slow cooker. 2. cook covered on high for 1 hour. 3. Cook covered on low for 6 hours. |

Sounds a lot like one I make. I also use onion soup mix and some of the commercial garlic mixes. (Garlic Garni, Primo's flavored garlic mixes, etc.) The barley also sounds like a great idea. Update: I gave this a try with barley. I had to add water several times to accommodate the barley swelling up. Even with this, I ended up with something more like a chunky veggie chili--esque concoction than a stew. Tasted great. Last edited on Sat Dec 31st, 2011 11:43 pm by kodiak |
