Hi everyone.. I was thinking we could share some BBQ Sauce recepies. Since I don't have any of my own I figured I'd take some from an old Today's Woman Barbecue Cook Book dated 1954. The way my Mom tells the story, BBQ was just getting started back then. No one really knew much about it, but it quickly became a california craze. Everyone started eating outdoors, of all the crazy things... and even cooking outdoors. So here they are.. Have fun with them and let me know if any of you make them.. Tobasco Garlic Sauce 1 TB Butter 1 md onion, chopped 1 clove garlic, minced 1/2 cup ketchup 1/4 cup vinegar 1 TB Brown Sugar 1 tsp Salt 1 tsp Tabasco 1/2 tsp Dry Mustard 1/4 cup Water Combine all ingredients in a saucepan, bring to a boil. Herb BBQ Sauce for Lamb 1 sm Onion, Chopped 3 cloves garlic, chopped 1 tsp dried rosemary 12 fresh mint leaves 1/4 cup vinegar 1/2 cup water Chop onion and garlic very fine. Add rosemary and mint leaves which have been crushed. Add Vinegar and water and let mixture stand overnight. When ready to BBQ Streaks or chops, brush them thoroughly with the sauce. Special Steak BBQ Sauce 2/3 cup butter 2/3 cup water 2 tsp A-1 Sauce 1 1/2 TB Lemon Juice 1/4 tsp Tobasco 2 tsp Sugar 1 tsp Salt A Few Grains Cayenne 2 tsp Flour Melt butter, add the water and other liquids. Molasses BBQ Sauce 1/4 cup Molasses 1 tsp prepared mustard 1 tsp Vinegar 1 8oz can tomato sauce 1/4 cup onion, chopped 1 tsp Tobasco Combine all ingredients in a saucepan. Bring to a boil and boil 1 minute. Makes 2/3 cup sauce Last edited on Wed Mar 30th, 2011 11:25 pm by boojum |

All-purpose BBQ Sauce 1/2 cup Butter 1 clove garlic, minced 1 onion, minced Dash of Tobasco 1/2 cup ketchup 3/4 tsp prepared mustard 1 TB prepared horse-radish 1 tsp Worcestershire sauce 2 TB Vinegar 2 tsp Sugar 1 tsp Chili Powder 1 tsp Salt 1/2 tsp Marjoram 1/2 tsp Thyme 1/4 tsp Pepper 3 cup Water Combine all ingredients in a saucepan and simmer 35 minutes. This sauce may be used to marinate meat in before cooking or brush meat with while cooking. Makes 1 quart sauce. |

Beer Barbecue Sauce 1/2 cup Molasses or Brown Sugar 1/4 cup prepared mustard 1/2 cup chili sauce 1 tsp Worcestershire sauce 1/2 cup finely minced onion 1/2 tsp salt 1/4 tsp Pepper 1/2 cup Beer Combine all ingredients in a saucepan; bring to a boil. Simmer 5 minutes. Use generously to baste hamburgers while broiling. To make basting easy over hot coals, supply the outdoor chef with a big mug with BBQ sauce and a long handled brush. |

Okay, in keeping with the "Ancient BBQ" theme, here's one from a slightly older source. This wuff's mom gave him her original "Searchlight Recipe Book". The original printing copyright is 1931. Wuff's book was re-issued in 1958; just one year after this wuffy was born! Wow! As Booj mentioned, BBQ got more popular in the 50s. But since this book was printed in '31, there aren't nearly so many BBQ sauces in it. Vargr guesses its because many folks were already cooking over a wood-fired stove/oven every day anyway, so what was the big appeal? In any event, this BBQ Sauce wasn't even included in the "Sauces" portion of the book. Instead, it was listed under the "Plate Dressing" section! 1930's BBQ Sauce (Searchlight Recipe Book) 1 large onion, chopped 1/2 C tomato catchup 2 C canned tomatoes 1 T butter 1 clove garlic, chopped 1/2 C Worcestershire sauce 1 T Sugar 1/2 C Vinegar red pepper, black pepper, salt, mustard (powdered) Strain tomatoes and add an equal amount water. Add remaining ingredients (except the spices). Cover. Simmer 10 minutes. Season to taste. Simmer 5 minutes. Thicken with flour, if desired. Cook until blended. Wuff's note: This seems a pretty straight-forward, tomato-based sauce. Likely to be a bit on the tart and tomato-y side of the scale, compared to today's sauces made with molasses, brown sugar, honey, etc, unless you use a quality canned tomato with its own natural sweetness, or a somewhat sweeter catchup.
