Ok, so I made the second portion of pot roast today... it's not done yet, but I made some changes.

1. Instead of mixing my own spices, I used a premix Italian Spice mix from Penzy.
2. I used Omnivore Salt instead of table salt.
3. I deglazed the pan using Kentucky Burbon instead of wine.

I'll let you guys know how it worked out!
