For my grilled cheese s-wiches, I prefer large round sourdough bread, a mixture of sharp cheddar + either jack or swiss cheese, and pure 100% unadulterated butter used in the grilling (about 1/2 tble per side). Add a bit of dill, a dash of salt, and you're golden. All said and done, it can be made for approx 14-17 WeightWatchers points (using the big bread, and about 2-3 oz of cheese) so a bit pricey from a weight-loss perspective, but do-able if you budget appropriately.
